Certification and Regulation: Stricter quality control measures and certifications, such as ISO 3632, are increasing production costs and affecting the supply chain.

Current Saffron Supply Chain:

Iran: Iran is the world’s largest producer of saffron, accounting for approximately 70% of global production.

Spain: Spain is the second-largest producer of safranillo (a type of saffron), accounting for around 20% of global production.

Other Regions: Other regions, such as Africa, Asia, and the Americas, are also producing saffron, but on a smaller scale.
