Instructions:

- Add the Arborio rice and cook for 1-2 minutes, stirring constantly.
- Add the warmed broth, 1/2 cup at a time, stirring constantly and allowing each portion to absorb before adding the next.
- After 20 minutes of cooking, stir in the soaked saffron and its liquid.
- Remove from heat and stir in the butter until melted. Season with salt and pepper to taste.

- 12 large scallops
