Recipe: Filled Éclairs
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup confectioners’ sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- Saffron-Infused Pastry Cream (above)
- Confectioners’ sugar, for dusting
Instructions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, confectioners’ sugar, and salt.

- Beat in the eggs until fully incorporated.
